Bring a little spice to your life! This is very straightforward and really delicious!
For me, the easiest thing is to prep the different parts and then toss them all in as needed. There is a mix of whole spices and ground spices that really add to the depth of flavour.
Start with putting together a saucer of the dried spices. One teaspoon of as many of these as you have:
- Cumin Powder
- Corriander Powder
- Turmeric Powder
- Mustard Powder
- Garam Masala
- Mild Chili Powder
Separately, prep two medium onions into a fine dice. Also finely chop a clove of garlic.
Now, get a pan onto medium-hot and add some oil. Add in all of these that you have:
- 1 tsp Cumin seeds
- 1 tsp Mustard seeds
- 6-8 Cardamom pods, slightly crushed
- 1 tsp nigella seeds
- 2 birdseye chilies, sliced
If you don't have fresh chilies, a teaspoon of dried flakes works.
When the seeds and chili are nicely hot and beginning to pop, add in the onion.
While the onion is frying drain and rinse two cans of chickpeas.
When the onion looks translucent and starting to caramelise, add in the garlic and keep frying for another minute.
Add in the chickpeas and stir for a minute before adding in the spice powders. Keep stirring for a minute then add in a can of chopped tomatoes. Add a pinch of salt now, but not too much.
Turn down the heat to a simmer and put a lid on. Leave for about 15 minutes until the chickpeas are cooked. Check the seasoning and add salt as required.
Serve with your favourite rice.
