Easy breakfast rolls

The "two ingredient" dough, that I shared about earlier in the Turkish-style Pide recipe, is really very versatile and so very easy!


Last night I mixed 200g of self-raising flour, 200ml of coconut yoghurt and a teaspoon of salt. After mixing it well in the bowl, I left it to sit in the bowl for about 30 minutes. After it had some time to rest, I separated it into four portions and rolled each into a ball. I put the four balls in the fridge overnight.


This morning, I came down and turned on the oven to preheat to 200C. I sprayed some oil onto a sheet of parchment and put the four dough balls down, squashing them flat onto the sheet. I sprayed them each with a little more oil and rubbed it over the top. 


I baked them in the hot oven for about 20 minutes until the tops were lightly browned. You can also tap the bases (carefully, they are hot!) they sounded hollow.

These rolls are quite like a more traditional Irish soda bread made with buttermilk - which isn't a big surprise. They are delicious warm from the oven with some vegan or dairy butter.
