I did used to like pork sausages of all type, and I also quite like some of the commercial veggie options available, especially the Linda McCartney ones and the Denny Meat Free ones. The main ingredient of the Linda McCartney sausages is actually textured soya protein, our old friend TVP!
There are quite a few good recipes for vegan sausages online, and I have tried quite a few of them. Unfortunately many are based on using vital wheat gluten / seitan, which I can eat but find it always leaves a strange aftertaste and feeling in my mouth so I avoid it. So this recipe uses more common store cupboard ingredients. The sausages aren’t “perfect” replacement for meat sausages, but they are tasty and work well.
Ingredients:
75g rolled oats
230g cooked chickpeas
3 tbsp cornflour
3 tbsp nutritional yeast
2 tsp salt
1 tbsp soy sauce / tamari
2 tbsp tomato purée
4 tsp mixed herbs
2 tsp garlic granules
1/2 tsp ground black pepper
1 medium onion, finely diced
40g salted vegan butter
Put the TVP in a bowl and cover in boiling water to rehydrate.
Melt the vegan butter in a medium heat (important not to be too hot) pan. Add the onion and 1 teaspoon of the mixed herbs and leave for 10 minutes or so until the onion has softened.
Gather all the rest of the ingredients in the bowl of a food processor. If you only have a small processor (like me!) mix everything in a normal bowl first and then process in batches.
Drain the TVP in a sieve and give a bit of a squeeze to push out excess water. Mix into the bowl with the rest of the ingredients. Pour in the cooked onion and all the melted butter.
Process the mix into a paste. If it looks very dry, add in some water, a little at a time.
Separate out the mix into 8-10 portions. Roll each portion into sausage shapes. You can cook them immediately, but if you leave them to hang out in the fridge for a couple of hours they will keep their shape better.
These are awesome with mash and gravy!
They also work well as hot dogs!
