I think that cabbage is underrated! It is inexpensive, has a lot of nutritional value, and is a very versatile vegetable. Anything from simply boiled, to coleslaw, to stuffed cabbage leaves, to "deconstructed" colcannon.
I had half a head of a Savoy cabbage in the fridge after having come across this braised cabbage recipe from Glen and Friends on YouTube.
I won't repeat the recipe here, because I pretty much made it the exact same as on the video. The only addition was a couple of sprigs of fresh thyme.
Towards the end of the cooking, I stirred in some cubes of smoked tofu, and then made some starchy white rice to go with it.
This cooks for a long time, but for most of the time you aren't doing any work. I prepped this during a mid-afternoon break from work, and served in the early evening.
It really is very, very tasty! I will make this again!
