As part of a recent celebration involving an online meeting, the organisers sent around a recipe for a chocolate mug cake, with the plan for everyone to make a cake at a set time, and then we all celebrate and eat together. A really nice idea, and I would encourage other groups to try it.
Now, the recipe that came around had egg and milk in it, so I decided to try veganising it. The milk was simple enough to swap out. Egg in a cake usually has a structural use. It acts as a binder and helps hold the cake together. There are some options around for replacing that structural use, but in this case a lot of the structure can be provided between the gluten in the flour, the moisture in the milk and oil, and the mug itself. So I just left it out! It will have a different texture than a cake made with egg, but it will still be delicious.
These ingredients are just right for a portion for me, but others may prefer a slightly different mix, perhaps more sugar. It is definitely one to have fun experimenting with!
Ingredients:
3 tbsp self-raising or self-rising flour *
Pinch of salt (only for self-raising)
2 tbsp any sugar
2 tbsp dark cocoa powder (no milk ingredients!)
3 tbsp non-dairy milk (I use oat)
2 tbsp vegetable oil
2 drops vanilla essence
* if you don't have one of the self-raising or self-rising, use all purpose flour and add a pinch of baking powder and rhe pinch of salt.
Pinch of salt (only for self-raising)
2 tbsp any sugar
2 tbsp dark cocoa powder (no milk ingredients!)
3 tbsp non-dairy milk (I use oat)
2 tbsp vegetable oil
2 drops vanilla essence

Put the flour, sugar and cocoa into a large mug and mix well together.
Put the non-dairy milk, the oil and the vanilla essence into a small jug or cup and mix briefly (they won't mix that well) and immediately pour into the mug with the dry ingredients, mixing them all together.
Continue mixing for minute or so until all is well combined. Make sure that you get all the dry ingredients, right down to the bottom of the cup, combined.
Put in your microwave at top heat until it is done. For me, in an 800W microwave, that is about 1 minute and 20 seconds. The timing is also something you can experiment with, with no potential raw egg to worry about!
