These beauties, which we picked up in Tesco, have an extra kick of fiery spice - more polyphenols!
The sub was made with firm tofu slices, fried in oil with just some salt, pepper and a little garlic powder. Towards the end I added in some tamari (soy sauce), which encourages some maillard reaction, and added a couple of handfuls of spinach to wilt. A squeeze of lemon juice deepens the flavour.
Yum!
