Vegan cream of mushroom soup

At 2.24 million subscribers, Adam Ragusea has one of the most popular YouTube channels. Probably one of the biggest that grew from no existing TV or publishing base.

I am a big fan and look forward to his weekly content. I, along with most of his fans, love his style. He is really good at explaining how things work, while delivering some really tasty recipes.


His (fancy) cream of mushroom soup is superb. I won't repeat the recipe here, but encourage you to go watch the video - it is only a few minutes long.

The genius is the combining of both dried and fresh mushrooms.

Adam does use butter and cream in his recipe. Following his suggestion, I just used more olive oil instead of butter. For the cream, I used a portion of my oat cream - which is really easy to make.

I did specially buy a small bottle of Hennessey Cognac for this, but it was on special! It was worth it.
