I have posted a vegan lunch meat seitan recipe before, but was inspired to make it even more protein rich while watching some videos on YouTube.
The added ingredient might be a surprise to some, but probably not to many vegans. It is, of course, tofu! Specifically though, silken tofu.
The recipe is actually identical to the previous one except I replaced the water with a 340g pack of firm silken tofu. I am sure that soft would work just as well.
When blending the ingredients it is useful to add just a bit of water, but you won't need more than a couple of tablespoons.
The mixed consistency is also slightly different, but the finished product is almost the same.
This time I chose to roast the seitan in a 180C oven for 1 hour, rather than steam it. Either way works for this recipe.
