I had a go at making meat from potatoes today, following what SauceStache did in this video, where he also makes cheese from potato.
I followed the instructions and got some good dehydrated potatoes, with some flavour from the broth.
I decided to use the potato meat in a chili-no-carne. It was grand, but I don't think that I will make it again.
It is a good bit of trouble to go to, and you really don't get any huge advantage over other sources of protein for such dishes. Crumbled firm tofu or TVP would be better options for me.
One upshot for me was that the left over potato broth, with soy sauce, vinegar and Marmite, made an excellent soup!
