Beans and Pasta

Warm, delicious and comforting, you would find similar in many Tuscan villages. This will take only 15 minutes to put together.


Any kind of beans will do for this, with butter beans (Lima beans) being an excellent choice. In fact, a can of mixed beans is a great call. Depending on the meal, whether lunch or dinner, you might go a whole 400g can of beans per person!

Ingredients

0.5-1 400g can of beans
Good handful of frozen peas
80g dried pasta per person
1/2 teaspoon garlic powder
1 teaspoon dried mixed herbs
2 tablespoons tomato puree
Optional, for extra fibre:
1 teaspoon chia seeds

Boil the pasta in salted water until al dente - usually about 8 minutes, but check the instructions. Drain the pasta, reserving about a cup full, and set the pasta aside in a bowl.

Add a dash of oil to a pot (I just use the same pot!) and add the garlic, herbs and one tablespoons of tomato puree. Stir this for a minute before adding in the beans and peas. Add a small pinch of salt and stir in a dash of the reserved pasta water to start to develop a sauce. 

Stir for a couple of minutes until the beans are heated through (canned beans are already cooked) then add in the pasta, some black pepper, and the chia seeds. Stir in the second tablespoon of tomato puree and another glug of pasta water.

Continue to stir for another minute or so until everything is heated through and the pasta is well coated in the sauce. Serve in a bowl alongside some fresh crusty bread.
