Angled Onion Pesto Sauce

Angled onions, three cornered leek, or allium triqetrum, is an invasive species in Ireland that generally starts off as a garden plant, but then spreads willingly. It is difficult to get rid of once established. In the spring, you will see it's white flowers and green shoots in many hedgerows.


It is, however, quite delicious! And all parts of the plant are edible, from bulb to flower, either fresh or cooked. It has a mild onion flavour and makes a delicious salad green. It also makes a very delicious pesto!

Ingredients

Good handful of angled onions
Handful of walnuts
A few glugs of extra virgin olive oil
Small pinch of salt
Splash of pasta water

Make some pasta and reserve the drained water. Leave the pasta in the warm pot. 


Put all the pesto ingredients into processor and whizz until smooth. Pour the sauce over the pasta and put the pot back on the heat. Add in some more of the pasta water as needed. Allow to cook, stirring, until the sauce thickens up. 


Serve with some fresh cracked black pepper.
